The BEST Oatmeal Pancakes

This recipe was designed for my hubby who will NOT take his cholesterol medicine and we're working on combatting the numbers with food and other holistic methods.

Soak 2 cups of old fashioned oats in milk (quick oats fine too and less soaking)
2 cups of unsweetened vanilla almond milk (soy milk or regular milk fine too)
After you've made some coffee and throw a load in the washer add the rest of the ingredients after 30 minutes.

2 eggs
2 tsp. cinnamon
1/2 tsp. sea salt
2/3 cup brown sugar packed
1 cup whole wheat flour (more or less for thinner or thicker pancakes)
2 tsp. baking powder
1/4 cup canola oil

Optional things to add to these on the griddle: nuts, seeds, huckleberries (our favorite), various berries or diced apples.
